Best MeatballsThese meatballs are the easiest to make! Just 6 ingredients including salt & pepper and no fillers or junk! I love to pair this with zoodles and pesto for a health take on spaghetti and meatballs!
Butternut Squash SoupIt’s finally soup season! Even though it’s still pretty warm in NYC, I’m embracing November and all the root veggies that come with it. I love butternut squash and this creamy (but dairy free) soup hits the spot on a chilly day. Add some hemp seeds for protein and you’ll be totally satisfied.
Cauliflower Crust PizzaI had heard of cauliflower crust pizza a while back but had no idea what to expect when I actually made it. In all honesty, the first time I attempted this, it was a disaster! But I tried again and now I can’t stop creating new pizza recipes all made out of cauliflower crust! It’s such a different approach on healthy pizza and this way you get all the nutrients from cauliflower and you’ll shock your guests at the same time.
Chilean Sea BassThis recipe is so delicious and so simple! Chilean Sea Bass has a buttery taste as is, so just a little bit of this marinade will shock you with how indulgent it tastes yet it couldn’t be healthier. I have made this while entertaining and it always gets such a great review!
Filet of Sole Taco BowlI love this recipe! I found the vegan version of the recipe from a blog and decided to add filet of sole to it so it felt more like fish tacos but as a salad instead. The mango dressing is so unique and couldn’t be easier to make. The sweetness of the dressing is slightly masked by the other ingredients and it all just goes together perfectly. I also love how this isn’t a traditional taco bowl, perfect for wowing your next dinner guest.
Kitchari – Ayurveda cleansing deliciousnessBefore spring arrives, I wanted to give one last warming and hearty recipe idea -- A few years ago I did a Kitchari cleanse which is an Ayurveda dish that is almost stew-like and amazing for your digestive system. These foods are easy to break down and they give your entire system a reset. When I did the cleanse, I ONLY ate this meal for 3 days…this time I just ate it once/day for 4 days and got my desired results – feeling cleansed, light but also nourished and satisfied. No matter how you do it, your belly will thank you! Find the recipe here.
Mustard SalmonThis recipe reminds me of my Mom’s home cooking. I grew up eating Salmon pretty often and this was a recurring recipe in our household. It’s probably one of the easiest recipes to make because there is no prep other than mixing 2 mustards and some dill together and basically no kitchen cleanup afterward. I make this dish when I want something home cooked but don’t have time to do much else.
Pesto SauceI have an obsession with pesto! I love playing around with diferent ways to make the sauce but this recipe right here is tried and true! You can swap out the pine nuts for pumpkin seeds, almonds or walnuts. Get creative!
Quinoa Stuffed PeppersI only recently started loving peppers. They’re so easy to throw into stir-fry or to scoop out and fill with quinoa and other veggie goodness. I love this recipe not only because of the simplicity but also because it looks so pretty. You will totally wow your guests if you make these at your next dinner party.
Sweet Potato LatkesIt must be Hanukkah, I have my pre-school menorah and sweet potato latkes! This recipe is such a crowd pleaser, I barely even needed apple sauce to dip the latkes in. Even if Hanukkah isn’t your holiday, wow your next party with these healthy deliciousness!
Sweet Potato Mash with Nut Crumble
Sweet Potato Mash with Nut CrumbleThis dish is perfect for a holiday dinner! You will shock even the biggest health skeptics as this is indulgent but completely healthy and pure. I used white sweet potatoes but orange work the same. Happy Thanksgiving!
