Summer Kale and Peach Salad

This salad screams summer! If you have access to a grill, throw the peaches on and enjoy the sweet tastes of summertime. I love the combo of peppers and peaches – so fresh!

 4 ripe peaches
 1 red pepper cut into pieces
 1 yellow pepper cut into pieces
 1 head of kale, chopped
 ½ red onion diced
 2 cloves of garlic minced
 Juice of a lemon (1/2 – 1 depending on your preference)
 1 ½ extra virgin olive oil
 Salt & pepper to taste

Cut peaches in half and put them on the grill so they get slightly charred (if you don’t have a grill, heat them in the oven)

In a bowl, combine red pepper, yellow pepper, onion, garlic and kale and massage in the juice of the lemon

Add in olive oil and salt & pepper

Once peaches are done, they will be super soft and easy to cut into pieces – add them to the bowl and enjoy!
